** The selection of egg plays a very important role for this dessert
** The eggs used must not be refrigerated before so that the beaten egg white batter is firmer
Ingredients:
3 egg yolks
1 tablespoon sugar
1 tablespoon self raising flour
1/8 teaspoon vanilla essence
3 egg white
30g butter
red dragon fruit, cut into wedges
adequate amount of icing sugar
Steps:
Mix together the egg yolks, sugar, self-raising flour and vanilla essence in a stainless steel bowl. Mix well and set aside.
Use an electric mixer to beat the egg white until firm peaks form.
Pour 1/3 of the beaten egg white batter into Step 1, mix well and set aside.
Melt butter in the cooker using medium heat (induction heat level 5).
Pour 1/2 of the melted butter into the remaining egg white batter and mix softly.
Pour the batter into the cooker on low heat (induction heat level 2) and leave it for 8 minutes.
Then sprinkle the red dragon fruit on top of the French Cake.
Use Chinese turner to fold the French Cake and sprinkle adequate icing sugar on top of the folded cake.
