Tip On Main Ingredient:
** White fungus with a bit of natural yellow is better
** If it is too white, the white fungus has gone through artificial bleaching

Ingredients:
  1. 150g white fungus, tear into small pieces and soak for 20 minutes

  2. 1 tablespoon South Almond (Nan Xing), rinsed

  3. 1 tablespoon North Almond (Bei Xing), rinsed

  4. 1 tablespoon Medlar Seeds

  5. 4 eggs

  6. 100g crystal rock sugar

  7. 2 slices ginger

  8. 1200ml water

Steps:
  1. Pour 1200ml water in the casserole and add in all the ingredients, except eggs.

  2. Boil the water and ingredients with medium-high heat.

  3. After boiling, put on the cover, turn to low heat and cook for 15 minutes.

  4. Remove the cover and add in 4 eggs one by one into the casserole. Do not stir.

  5. Put on the cover and cook for another 2 minutes.

  6. Ready to serve.
